Additional Info : The Kaaimansgat (Crocodile’s Lair) vineyard, 80 km from Hermanus and 700 m above sea level, lies in a secluded valley surrounded by mountains. Despite challenging conditions, the vintage yielded a healthy crop. Chardonnay juice was lightly oxygenated before fermentation to reduce phenolics and enhance freshness. Most of the wine underwent malolactic fermentation for balance, then matured for 8 months in French oak (22% new).
